Baked Doughnuts Filled with Apple and Chocolate Glaze

Ingredients
Dough:
- 120 ml — water
- 1 g (a pinch) — dry yeast
- 1 pinch — table salt
- 20 ml (two tbsp) — vanilla extract
- 1 pinch — turmeric
- 30 ml — oil
- 25 g — solid sweetener of choice
- 230 g — whole wheat flour
Filling:
- 100–150 g — apples cooked down like jam
- 1 pinch — cinnamon
Decoration:
- 30 g — melted chocolate
Preparation
- I mixed all the ingredients together, added the oil, and kneaded for another 1–2 minutes.
- I left the dough to rise at room temperature until it doubled in volume.
- I sprinkled a little flour on the work surface, rolled out 2 sheets, and cut out the doughnut shapes with a cutter.
- I filled them with grated apple cooked down like jam, without adding any sweetener.
- I placed another cut-out doughnut on top of the filled one.
- I gently pressed the edges and let them rise on the baking tray for about 20–30 minutes.
- I baked them for about 25–30 minutes at 180°C for the first 10 minutes, then reduced the heat to 150–160°C.
Additional notes
- The apple used as filling represents the quantity of apple already cooked down.
- About one tablespoon of apple goes into each doughnut.
- You can fill them however you like or leave them plain.
- I usually prepare the dough in the evening and bake it the next day.
- They are fluffy and don't crack on top or at the sides, keeping the filling inside!
